Halloween Cupcakes

Ready to whip up something spook-tacular in no time? Try these fang-tastic microwave chocolate cupcakes that are scary easy to make and delightfully delicious. Perfect for last-minute party prep or a cozy night in.

This recipe is made using the Sharp Convection Microwave - Stainless - 1100W.


Ingredients

  • 175g Nestle milk choc melts
  • 100 g butter
  • 1/2 cup of sour cream
  • 1 1/4 cups of warm water
  • 2 eggs, lightly beaten
  • 2 1/2 cups of self-raising flour, sifted
  • 1 cup brown sugar
  • 1/2 teaspoon baking powder


Instructions

For the cupcakes

  1. Place chocolate and butter in a large microwave safe bowl. Melt for 1-1 1/2 minutes on 1, stirring during cooking.
  2. Add sour cream and water. Cook a further 1 minute on 1100W. Mix well.
  3. Stir in eggs, flour, sugar and baking powder.
  4. Mix well, pour into a greased microwave safe cake container.
  5. Cook for 6 minutes on 5 followed by 6 minutes on CONVECTION
  6. 130°C. Allow to stand 10 minutes before turning out.
  7. Allow to cool before icing.

For the icing

  1. Melt the chocolate and coffee for 1-2 minutes on 110W.
  2. Add sour cream and beat well.
